Sanma (Pacific Saury, Fresh)

Sanma (Pacific Saury) literally translates to "Autumn Sword Fish". It travels south from Hokkaido to Honshu in the fall. It has a relatively short season. Mostly enjoyed by simply grilling it as it has extremely high fat content and most of the fish can be eaten. It requires a lot of work to make nigiri despite each fish only being able to have very few servings. Average piece weighs roughly 0.20LB, but sizes will vary. Sold by the piece! Get it before the season ends.
