Ayu (Sweetfish, Fresh)

Japanese Ayu, aka Sweetfish, is known as Japan's favorite freshwater fish. Ayu can only be found in the most pristine rivers, requiring clean fresh water. Because these fish typically only survive in extremely clean water, a nickname they are given in Japan is "sieryu no  jouou", or the queen of clear rivers. 

They are called "sweetfish" due to their sweet tasting meat, which some say is reminiscent of fresh melon. Traditionally skewered whole and grilled over charcoal, enjoy Ayu as sashimi, fried, or baked.
