Miso-Grilled Live Kegani
Indulge in the rich flavors of Miso-Grilled Live Kegani, a Japanese delicacy. Discover a tantalizing blend of succulent kegani crab elevated by savory miso marinade in this exquisite seafood delight.


  • 1 full shell of a live Kegani 
  • 1 teaspoon sake 
  • 1/3 teaspoon miso paste 
  •  1/2 cup shredded cheese such as mozzarella



  1. Clean the crab, following directions below.
  2. Scrape out the crab meat and dissolve the crab miso in sake to make 'shell sake'.
  3. Mix the crab meat and crab miso and regular miso, and top with shredded cheese.
  4. Bake in the oven at a high temperature for 8-10 minutes until the cheese melts and is lightly browned and the crab is fragrant.

What is Crab Miso? 

Crab Miso is the internal organs and eggs within the crab. They are a darker color and one of the most prized parts of the crab.

How to cut a Live Kegani (Hairy Crab):

  1. Separate the body and legs with kitchen scissors. Open the shell with your hands.
  2. You cannot eat crab gills. Cut them off with scissors and discard them.
  3. Cut the body in half with scissors. Remove the crab meat and crab miso, or in the darker colored internal organs) inside.
  4. Cut off the ends of the crab legs with scissors and take out the meat inside.
