Uni Pasta
A truly decadent dish that comes together in under 30 minutes. At most restaurants you get a hint of flavor, this way you get a big uni flavor bomb.
Equipment:
- Food processor
- Medium pot
- FIne mesh strainer
- Medium mixing bowl
Ingredients:
- 4 ounces uni
- 6 tablespoons unsalted butter, softened
- 1 teaspoon sea salt
- ½ pound thin spaghetti, such as capellini
- 2 tablespoons chives, finely chopped for garnish
- 1 ounce caviar, for garnish
Method:
1. Set aside 4 uni pieces for garnish.
2. In the bowl of a food processor, add remaining uni, butter, and salt. Whirl until smooth. Set aside.
3. In a medium pot, bring water to a boil, add a big pinch of salt and the pasta. Cook until al dente, about 1-2 minutes less than the package directions. Remove ½ cup of pasta water and drain pasta
4. In a medium mixing bowl, combine the uni butter with a few tablespoons of pasta water. Add the pasta and toss to coat. Add more pasta water, a teaspoon at a time, as needed.
5. Evenly divide between 4 serving plates or bowls. Top with chives, caviar and remaining uni. Enjoy immediately.
