Soba Noodle Soup with Shrimp Tempura
Restaurant-quality soba is hard to find and this dish with the best, most authentic soba from Japan is a show-stopper at home. Easy to prepare with tsuyu sauce (noodle soup base) and ready-made shrimp tempura you can keep in the freezer. It’s a trip to Japan without leaving home!
Equipment:
- Medium saucepan
- Medium bowls
- Ladle
Ingredients:
- 1 package soba noodles, cook according to package directions
- 1 package tsuyu sauce
- Shrimp tempura pack, defrosted and heated
- ½ pound bok choy, steamed
- 3 radishes, thinly sliced
- 1 bunch scallions, trimmed and sliced on a bias
- Togarashi for garnish
Method:
Assemble the soup: Evenly divide ramen and soup into two bowls. Arrange 2 shrimp and half of the bok choy over the soba. Arrange radish, then garnish with scallions and togarashi. Serve immediately.
