Sizzling Shrimp Fajitas

Ingredients

  • 1 lb Shrimp (peeled and deveined)
  • 2 tablespoons olive oil
  • Juice of 1 lime
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • Salt and black pepper, to taste
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small red onion, sliced
  • 1 tablespoon olive oil
  • Pinch of salt
  • Warm flour tortillas
  • Sour cream or crema
  • Guacamole or sliced avocado
  • Fresh cilantro and lime wedges

Instructions

  1. In a bowl, mix shrimp with olive oil, lime juice, chili powder, cumin, paprika, garlic powder, salt, and pepper. Let marinate for 10–15 minutes.
  2. Heat a cast iron skillet or large sauté pan over medium-high. Add oil, then toss in bell peppers and onions. Cook for 4–5 minutes, stirring occasionally, until just softened and slightly charred. Remove from pan and set aside.
  3. In the same skillet, add the marinated shrimp in a single layer. Cook 1–2 minutes per side until pink and lightly seared. Add the cooked veggies back into the pan and toss everything together.
  4. Bring the hot skillet straight to the table (carefully!) and serve immediately with warm tortillas and your favorite toppings.
