Sizzling Shrimp Fajitas

Juicy Wild Blue Shrimp are tossed in a smoky-lime marinade and seared alongside bell peppers and onions until perfectly charred. Pile them into warm tortillas with a dollop of sour cream or guac—and listen to the sizzle while they’re still hot.
Ingredients
- 1 lb Shrimp (peeled and deveined)
- 2 tablespoons olive oil
- Juice of 1 lime
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- ½ teaspoon garlic powder
- Salt and black pepper, to taste
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small red onion, sliced
- 1 tablespoon olive oil
- Pinch of salt
- Warm flour tortillas
- Sour cream or crema
- Guacamole or sliced avocado
- Fresh cilantro and lime wedges
Instructions
- In a bowl, mix shrimp with olive oil, lime juice, chili powder, cumin, paprika, garlic powder, salt, and pepper. Let marinate for 10–15 minutes.
- Heat a cast iron skillet or large sauté pan over medium-high. Add oil, then toss in bell peppers and onions. Cook for 4–5 minutes, stirring occasionally, until just softened and slightly charred. Remove from pan and set aside.
- In the same skillet, add the marinated shrimp in a single layer. Cook 1–2 minutes per side until pink and lightly seared. Add the cooked veggies back into the pan and toss everything together.
- Bring the hot skillet straight to the table (carefully!) and serve immediately with warm tortillas and your favorite toppings.
