Salt-Grilled Sayori
Delight in the simplicity of Salt-Grilled Sayori, a traditional Japanese dish. Enjoy the delicate, tender texture and subtle flavors of grilled needlefish, seasoned perfectly with just salt, creating an exquisite seafood experience. This recipe makes 2 servings.

Ingredients:

  • 2 pieces sayori, or halfbeak
  • 1 tbsp sake
  • 2 pinches salt
  • 1 tbsp oil
  • 1 lemon, cut into wedges


Instructions:

  1. Remove the scales and the internal organs from the sayori.
  2. Place the cleaned sayori and sake in a baking pan, mix gently with your hands, cover with plastic wrap, and leave in the refrigerator for about 15 minutes.
  3. After 15 minute, wipe off any excess water with kitchen paper and sprinkle salt on both sides of the fish. Preheat oven to 400°F
  4. Brush the grill with oil and place sayori on a baking sheet.
  5. Bake at 400°F for about 10 minutes, or until cooked through.
  6. Top with lemon wedges.
