Salmon Shio Koji
Enjoy Loch Duart Salmon Tikka Rotis recipe which combines tender, marinated salmon with cooling mint raita and a touch of sweet mango chutney, all wrapped in soft whole-grain rotis for a deliciously balanced, flavorful bite!

Ingredients:

  • ½ lb salmon
  • 2 tbsp shio koji
  • Optional: sliced onion, yuzu or lemon slices.

Instructions:

1. In a bag, combine the salmon and shio koji. Optionally, add other ingredients of your choice.

2. Let it marinate in the fridge for at least 1 hour, or overnight for a deeper flavor.

3. Cooking.

*Pan searing: In a medium heat pan, put salmon skin side down for about 3 minutes, flip over and cook for another 3 minutes.

*For cooking in an oven, Preheat your oven to 375°F (190°C). Arrange the salmon on a baking sheet lined with parchment paper. Bake for 15-20 minutes, or until the salmon is cooked to medium rare.

4. Serve with a wedge of lemon and a side of steamed rice.
