Mentaiko Pasta
Savor the fusion of flavors with Mentaiko Pasta – a tantalizing Japanese-Italian dish. Dive into al dente pasta coated in creamy mentaiko sauce, delivering a perfect balance of umami and seafood richness in every bite. This recipe makes 2 servings.


  • 200g spaghetti or other long, thin pasta
  • 100g mentaiko
  • 10 g butter
  • 1 tablespoon mayonnaise:   
  • 1 teaspoon soy sauce
  • 5 pieces shiso leaves:   
  • ¼ lemon      
  • (Optional) splash of cream


  1. Boil a large pot of salted water, add spaghetti and cook to al dente, according to package instructions.
  2. While the pasta is cooking, remove the thin skin from the mentaiko.
  3. Mix softened butter, mayonnaise, soy sauce and mentaiko. Taste the mixture and adjust the amount of soy sauce according to taste and how salty the mentaiko is. Add a splash of cream if desired.
  4. Mix everything together with spaghetti while still hot.
  5. Place in a bowl, top with shredded shiso leaves, and garnish with lemon.
