Loch Duart Salmon & Apple Tartar
This fresh and vibrant Salmon & Apple Tartar recipe is a delightful blend of flavors and textures. The dish combines finely diced salmon with a zesty dressing of Dijon mustard, lemon, and chives, layered with creamy avocado and crisp green apple. The tartar is beautifully garnished with micro herbs, creating an elegant and refreshing appetizer that's perfect for any occasion.
Ingredients:
- 350 g Salmon fillet
- 1 Green apple, very finley diced (adda a squeeze of lemon juice to keep the colour)
- 1 large Avocado
- 1 tsp Dijon mustard
- Juice of 1 Lemon
- 2 Tbsp Olive oil
- 2 Tbsp Chives, finely copped
- Salt & pepper
- Cress or micro herbs for garnish
Instructions:
- In a small bowl whisk together the dijon mustard, half the lemon juice, chives and olive oil.
- Finely dice the salmon fillet, removing the brown flesh near the skin. Add the dressing, ⅔’s chopped apple, season with salt and pepper, cover and refrigerate until needed.
- For the avocado, peel and finely dice, add the remaining lemon juice and season. Mash with a fork to break down.
- To assemble, place a ring on a plate and begin with the 1-2 tablespoons of avocado, then follow with the salmon mixture.
- Remove the ring and top with the remaining diced apple and cress.
