Crab Fried Rice

This quick and flavorful crab fried rice brings together fragrant jasmine rice, fluffy egg, and sweet crab in a dish that’s perfect for using up leftovers but fancy enough for guests.
Ingredients:
- 2 cups cold cooked jasmine rice
- 2 eggs, beaten
- 1 cup crab meat
- 3 scallions, chopped
- 2 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tsp sesame oil
- 2 tbsp neutral oil (like canola)
- Optional: lime wedges and chili oil for serving
Instructions:
- Heat oil in a wok or large pan. Scramble the eggs and push to one side.
- Add garlic, scallions, and crab, stir for 1–2 minutes.
- Add rice and break it up in the pan. Stir in soy sauce and sesame oil.
- Mix everything together, cook until hot, and serve with lime and chili oil if desired.
