Chinese-Style Hiramasa (Yellowtail Amberjack) Carpaccio

Ingredients:
- 1 pack Hiramasa (around ½ pound)
- ¼ red onion
- One bunch cilantro
- Handful peanuts
- 1 tbsp Sesame seeds
Dressing:
- 1 tablespoon soy sauce
- 1 tablespoon lemon juice
- 1 teaspoon sugar
- ⅓ teaspoon salt
- 2 tablespoons sesame oil
Instructions:
- Slice Hiramasa into thin strips,
- Slice the red onion, soak it in water for about 5 minutes, and drain.
- Tear the coriander into bite-sized pieces, and roughly chop the peanuts.
- Mix dressing ingredients. Mix all the ingredients but the sesame oil first, adding sesame oil only when the rest are combined.
- Put everything in a bowl, add dressing and enjoy.
