Chinese-Style Hiramasa (Yellowtail Amberjack) Carpaccio
Craft an exquisite Chinese-style hiramasa carpaccio with delicate slices of yellowtail amberjack, accented by the crunch of red onion, the freshness of cilantro, and the nuttiness of peanuts.   • 1 pack Hiramasa (around ½ pound)
  • ¼ red onion
  • One bunch cilantro
  • Handful peanuts
  • 1 tbsp Sesame seeds


    • 1 tablespoon soy sauce
    • 1 tablespoon lemon juice
    • 1 teaspoon sugar
    • ⅓ teaspoon salt
    • 2 tablespoons sesame oil


  1. Slice Hiramasa into thin strips,
  2. Slice the red onion, soak it in water for about 5 minutes, and drain.
  3. Tear the coriander into bite-sized pieces, and roughly chop the peanuts.
  4. Mix dressing ingredients. Mix all the ingredients but the sesame oil first, adding sesame oil only when the rest are combined.
  5. Put everything in a bowl, add dressing and enjoy.
