Kinmedai (Alfonsino) is many American sushi lovers' favorite piece of nigiri from Japan. Although it is fatty, it has a mild flavor that is enjoyed by many. The "best" quality Kinmedai is caught in Choshi, just outside of Tokyo, but is also available in areas like Shizuoka. Skin is generally left on where the chefs may torch the it (aburi) style to enhance the aroma. Average piece is 2.5LB, but sizes will vary.
