Fresh kanpachi (amberback) fillet from Kyushu, Japan, is farm raised in pristine conditions and handled with extreme care by experienced Japanese farmers. Japanese Kanpachi (Amerberjack) fillet is a leaner, more milder tasting version of hamachi (yellowtail). Wild Kanpachi is best during the summer time, but many prefer farmed due to its distinct price differences. Meat is firm, taste is sweet and a little bit of fat, but not as much as hamachi. Wild Kanpachi can grow to over 100 pounds and 6 feet in length but those are in very rare occasions.
