Seared Bonito is called 'katsuo no tataki' (鰹のたたき, pounded bonito) in Japanese. 'Katsuo' (鰹) is bonito and 'tataki' (たたき) means pounding in Japanese. When the bonito skin is seared and charred, it gives an appetising aroma to the sashimi.
